Things you need

1. A glass/metal jar with wide opening. Avoid plastic because the chemicals that are present in the plastic may leach into the tea and corrode it.
2. A large dish towel or piece of cloth that can be tied around the opening of the jar with the help of a rubber band.
3. 1 SCOBY disk i.e. the disk of bacteria that help in the fermentation of the tea. You should be able to get one at a health store or online.
4. 8 cups of water—tap, filtered, or distilled.
5. 4 bags of black/green tea. While black tea is traditionally used in the process, some people like to use green tea as well.
6. ½ a cup of organic cane sugar or honey. The choice between cane sugar and honey is entirely your own but organic sugar is preferred since it works better in avoiding contaminants.
7. 1 cup of pre-made Kombucha.
How to Prepare Kombucha Tea
1. Boil the water on a stovetop and after it’s boiling, switch off the heat and add the teabags and sugar. Stir until the sugar is dissolved perfectly.
2. Allow the pot to sit for about 15 minutes. Remove the tea bags and discard.
3. Allow this mixture to cool down for around 1 hour (till it comes to room temperature), and then add the mixture to the big bowl. Pour the SCOBY disk and the pre-made Kombucha.
4. Cover the jar with the piece of cloth thin enough to let the air pass through. Secure the cloth with a rubber band.
5. Allow the Kombucha Tea to sit idle for a period of 7 to 10 days. The lesser the time, the less will be the sourness of the tea. You can establish the right taste by tasting the tea every fourth day. Once you are satisfied with the taste, you can store your tea in smaller containers as per your convenience. Allow the entire Kombucha batch to refrigerate—at least for 24 hours—in order to finish the carbonating. After it has cooled, it is ready to be used.

Potential Side Effects of Kombucha Tea

Since the procedure to keep the tea eniterly germ-free is not very authentic, it is recommended that women who are pregnant or breastfeeding and people with weak immune system do not consume Kombucha Tea.
